Our vision for the distillery has always been to provide a home for the spirit curious, and to experience, experiment and produce next generation spirits in house inspired by a passionate pursuit. Which is why we are proud to offer a variety of experiences from guided tastings, distillery tours, and our comprehensive spirit school. So no matter your taste, time or knowledge of the spirit world, we’re here to demystify, sip and swirl, right along with you.

Spirit School

Distiller for the day

Looking to dive a little deeper? Become a distiller for the day and immerse yourself in process. Beginning with a gin blending class and ending with your very own bottle of bespoke spirit distilled by you. Guided by our head distiller prepare to lift the veil on the ever-mysterious distilling process.

Tailored for the spirit-curious, the two hour class is run in pairs, with each participant receiving:

- a complimentary G&T on arrival
- learn about the history and process of gin distilling
- select botanicals from our wide selection of both Australian and international botanicals
- distill your gin using our innovative miniature stills
- explore mixing of 'cuts' to form a finished gin
- hand fill and label your own ceramic bottle of your bespoke gin

We also provide a twin share cheese platter per pair to enjoy during your class.

Gin Blending Class

Design your flavour

Greeted with a complimentary No. 8 Dry Gin & Tonic, our distillery team will take you through the history of gin and distilling, exploring both traditional and contemporary gin profiles before assisting you with your very own gin blends.

Taking our multi-award winning Just Juniper as your base spirit, select from more than 20 quality botanicals to craft two gins unique to your taste and designed for your palette. Name and hand label your gins, before taking them home to show off to your friends.

Each class lasts approximately 1 hour with each participant receiving a complimentary No. 8 Dry Gin & Tonic on arrival, 2x200ml bottles of bespoke gin and 10% off purchases at our bottle-shop.

Distillery Tours

Housed just next to our bar and cellar door is our next generation distillery and spirits lab. Enjoy a complimentary No. 8 Dry gin & tonic while you explore our spirits lab and peruse our botanicals before moving into our distilling hall.

Learn about traditional distilling vs modern distilling, and the processes used to produce our spirits range. We also share some secrets about why we do things differently to other distilleries. View our barrel room and learn more about one of the most important parts of distilling many spirits, maturation.

This in depth insight into the inner workings of our distillery offers a rare glimpse into a unique Australian distillery challenging the norms and traditions of this ancient science.

Looking for us? Earp Distilling Co. is tucked away in the harbourside haven of Carrington, Newcastle - lovingly referred to as Carrodise. Close to Newcastle CBD and the Newcastle Transport Interchange, our distillery and bar are open to the public Wednesday through Sunday every week. Our cellar door offers tastings and bottle sales 7 days a week.
