Our No. 8 Dry Gin has been aged 6-8 weeks in vintage Madeira casks enhancing flavour and imbuing notes of rum and whisky, while still remaining a true gin.

Cantrill Organics is a long-standing family owned NSW business. When they came to us looking to repurpose dark cherry fruit pulp that would have otherwise gone to waste, we knew a cherry-rum infusion would suit the task.

Local vineyards contacted us about how to use their 2020 fire-affected grapes. After distilling them to an ‘eau de vie’, we aged this spirit in vintage Hunter Valley Fortified casks. It can be thought of as a reflection of time.

Our next generation twist on this ever mysterious spirit. Combined with a traditional body of wormwood, star anise, and fennel our take on this spirit includes a lemon peel and cinnamon for a velvety finish.

After the amazing feedback on our Limoncello and Orancello, we wanted to explore what blood orange could bring to the table. Crafted using the same light sugar technique as our other cellos, it delivers a vibrant and refreshing twist.

Weaponcello

First created in a happy accident when a batch of our limoncello caramelised during production, this Weaponcello is a mix of that extraction and vodka, creating a balanced, beautiful citrus and burnt toffee taste experience.
PROFILE: Subtle citrus zest, lightly sweet & candied with hints of eucalyptus, mandarin and toffee
Chilli

Habanero chillies imparted strong spice and an amazing orange colour to this extraction. Just like the hue, the spice of this spirit is intense, but the heat will slowly dissipate as you sip, leaving a satisfyingly rich, lingering flavour.
PROFILE: A slow building heat intensity full of rich chilli flavours, relaxing into subtle sweetness

An autumn season symphony of crispy rhubarb, supported by mango, lemon and thyme. This gin was FAT WASHED using duck fat imparting a unique buttery finish, without losing the natural sweetness of the other ingredients.

Made from 500kg of Manuka Honey (from NSW wild growth Leptosperum forests). First fermented then barrel aged for 30mo in American Oak casks, it has unique depth while highlighting the natural honey sweetness.
PROFILE: Creamy and delicate, the natural sweetness of of honey rounded out by a hint of oak and eucalypt

Extractions deliver intense flavour but require precision to make. We perfected a method to isolate flavours from soft fruits like banana. Blended with virgin American oak aged rum, the result showcases the technique’s full potential.
PROFILE: Creamy and soft, naturally sweet with hints of grassy earth, and rich wood tones
